We know that regular vegetable consumption is good for our health, but what is a salad without dressing? The ZELEN team is always looking for something new to add an interesting flavor to our favorite leafy greens! And here, our friend, Chef Nikoleta Koleva, came to our rescue.

Actually, we invited her to try the exciting new additions to the ZELEN store – seeds, oil, and protein powder from the South American sacha inchi plant. These, in turn, inspired her to create a wonderful dressing, but let her first tell you herself about these curious products:

“I’m just now learning about this superfood, and people in the mountainous regions of Peru have been consuming it for millennia. The seeds have a mild taste, resembling almond and apricot kernel. They can be a wonderful crunchy addition to any smoothie, breakfast, dessert, and salad.
The protein powder is pleasant and slightly sweet. It is rich in iron, calcium, vitamin C, and Omega-3 fatty acids. It is considered one of the easiest plant-based proteins to digest. This makes it suitable for people who have digestive difficulties with protein supplements, for vegetarians, vegans, and people with lactose intolerance.
The oil has a light aroma and is cold-pressed. A great option as an addition to salad, but it is not recommended for heat treatment.”


If you're wondering how to incorporate extra healthy fats, essential nutrients, and a new flavor into your salad, here's an easy recipe for an irresistible green dressing:
 
  • juice of ½ orange
  • 2 tbsp olive oil
  • 4 tbsp sacha inchi oil
  • 2 tbsp shelled hemp seeds
  • 2 cloves garlic
  • 1/3 tsp spirulina powder (optional)
  • 1/3 tsp nettle powder (optional)
  • ½ tsp red pepper
  • 1/3 bunch chopped parsley
  • 1/3 bunch chopped dill
  • salt and pepper to taste

    Blend everything with an immersion blender. Try it in a salad of arugula, baby spinach, lettuce, and roasted red beets. Garnish with sacha inchi seeds for a crunchy finish.
    * The mixture can be stored for 5 days in the refrigerator.
