The taste of this baklava is definitely captivating! Can you believe that after the first piece, we couldn't stop eating it! With whole-wheat phyllo, ground walnuts, and peanut butter.

The syrup is made with maple syrup, and the combination of peanut butter and ground walnuts is incomparable! ?

Ingredients for Neti's Healthy Vegan Baklava:
  • 1 package whole-wheat phyllo pastry sheets
  • 100 ml flaxseed oil
  • 50 ml coconut oil
  • 200g walnuts
  • 100g peanut butter

    For the syrup:
     
  • 250 ml maple syrup
  • 500 ml water
  • 150g erythritol
  • 2 packets vanilla
  • 4-5 tbsp hemp seeds

How to prepare Neti's Healthy Vegan Baklava
First, grind the walnuts into a fine powder in a food processor. Prepare a round baking dish for the baklava. Grease the bottom and sides with coconut oil. Place the baking dish on top of all the phyllo sheets and cut them to the size of the dish to fit perfectly. Do not discard the remaining phyllo edges; use them between the other sheets.

Place the first phyllo sheet in the dish and brush it with coconut oil and 1 tbsp of flaxseed oil. Do the same with 3-4 more sheets, which will remain at the bottom of the dish without putting walnuts or butter between them. Save 3-4 sheets for the very top. Then, alternate 1 sheet, which you first brush with coconut oil, then with flaxseed oil and 1 tbsp of peanut butter, sprinkle a thin layer of ground walnuts, cover with another sheet, and repeat until all the sheets are used.

Cut the baklava into squares with a very sharp knife, first making vertical lines down and then horizontal ones.

Brush the top again with coconut oil and 2-3 tbsp of flaxseed oil.

Bake in a preheated oven at 150 degrees Celsius for about 40-50 minutes. Once ready, remove it from the oven and let it cool completely.

Start preparing the syrup. In a pot, put maple syrup, water, and erythritol. Boil for about 30 minutes.

Then add the vanilla. Pour the hot syrup over the cooled baklava.

Decorate each square with peanut butter and hemp seeds. Set the baklava aside to soak up the syrup well. Once cooled, it can be stored in the refrigerator.
