Ingredients for Lemon Muffins

  • 250 g spelt flour type 1050
  • 100 g almond flour
  • 100 g coconut sugar
  • 125 g soft butter
  • 4 eggs
  • 1 lemon and lemon zest
  • 200 g sour cream
  • 1 tsp organic baking powder
  • 1/2 tsp baking soda
  • 3 tsp organic Bourbon vanilla powder

    For the glaze:
     
  • 250 g mascarpone
  • 200 g cream cheese
  • 2 tbsp powdered sugar
  • juice of 1/2 lemon and zest
  • 1/2 bunch fresh mint

How to prepare Lemon Muffins

Take all ingredients out at least an hour in advance to reach room temperature.

Beat the butter and 80 g of the coconut sugar with a mixer until creamy. Separate the egg yolks from the whites and add the yolks to the butter mixture, beat again with a mixer. Add a little lemon zest and the juice of 1/2 lemon and stir again.

Sift both types of flour and add the baking powder and baking soda to them.

Add the vanilla and again the juice of 1/2 lemon and zest to the sour cream.

Combine all mixtures - the butter mixture, the dry ingredients with flour, and the sour cream with vanilla into one.

Beat the egg whites with the remaining coconut sugar until stiff peaks form and gently fold them into the single mixture. Fill 12 muffin molds with the mixture and bake for 20-25 min. at 180 degrees. Once ready, let them cool very well.

For the glaze: mix the mascarpone with the cream cheese, powdered sugar, and again the juice and zest of 1/2 lemon. Mix well and fill into a piping bag. Decorate the cooled cupcakes with the mixture from the piping bag, lemon slices, and fresh mint leaves.
