Hazelnut-Chocolate Easter Baskets

These baskets are a wonderful way to celebrate the holiday with something sweet, yet healthy and free from animal products. They are also great for children, who will have a lot of fun participating in their preparation. The ingredients alternate to delight the palate, from a delicate hazelnut base, through a silky chocolate cream, to crispy kale and coconut chips. And the chocolate-covered almonds are the icing on the cake! The best part is that you don't need any confectionery skills at all; they are as easy to make as child's play. 

Ingredients for Hazelnut-Chocolate Easter Baskets

 
  • 100 g raw hazelnuts
  • 150 g pitted dates
  • 150 g hazelnut-cocoa spread
  • 20 ml coconut milk
  • 30 g chocolate kale chips
  • 50 g salted caramel coconut chips
  • 40 g chocolate almonds

Method of Preparation for Hazelnut-Chocolate Easter Baskets

Grind the raw hazelnuts in a food processor, then add the dates and grind until sticky crumbs are formed.

Line muffin or crème caramel molds with baking paper, making sure the edges extend over the top.

Distribute the mixture evenly at the bottom of the molds to form small cups. (This recipe yields 6 baskets.)

Melt the hazelnut-cocoa spread and coconut milk in a bain-marie for a very short time, stirring constantly. The goal is for them to combine and form a thick, easily spoonable cream.

Pour 2-3 spoonfuls of the cream into each basket, then chill them in the freezer for 10 minutes to set.

Finally, decorate with kale and coconut chips to create nests. Place 3 chocolate almonds in each.

Store them in a sealed container in the refrigerator until it's time to enjoy them with your loved ones!
