Healthy Sweet Salami with Hazelnut and Tapioca Flour

Ingredients:

  • 100 g hazelnut flour
  • 1 tbsp tapioca flour
  • 3–4 tbsp erythritol
  • 2 tbsp cocoa powder
  • 2 tbsp coconut oil (melted) or 1 tbsp hazelnut tahini
  • 5–6 juicy dates
  • Pinch of salt and vanilla
  • 1 handful chopped nuts (hazelnuts or other)
  • A little nut milk (if the mixture is dry)

Instructions:

  1. In a bowl, mix: hazelnut flour, tapioca flour, erythritol, cocoa, a pinch of salt, and vanilla.
  2. Add the melted coconut oil and the dates, which you have pureed first – mix until sticky, but not too wet, in texture.
  3. Finally, add the chopped nuts. If the mixture is dry – add 1–2 tbsp nut milk.
  4. Form a "salami" on baking paper, wrap tightly and leave in the refrigerator for 2–3 hours or in the freezer for faster setting.

Before serving: slice into rounds. You can sprinkle with erythritol powder or cocoa.
